However, we shall see that, although not exclusive to food polymers, mobility changes of the secondary transitions measured through the temperature of the relaxations can be very large and frustrate all attempts of correlation. DEPENDENCE OF A TRANSITION TEMPERATURE WITH FREQUENCY As stated in the third law of thermodynamics, all crystallizable materials prefer ordered states at low temperatures. This implies that all properties of the system are in internal equilibrium. This is far from true in terms of practical results, as illustrated by the occurrence of the glassy state and the incomplete crystallization of polymers, even if supported by their structural regularity.
